Conspiracy Chocolate - Sichuan Pepper

Sichuan pepper is an unlikely pairing for chocolate… and yet! The chocolate enables the particularity of the pepper to shine. Indeed, this bar is not spicy as one might think but it has the distinct numbness of the Sichuan pepper. Even better, your mouthfeel and so the chocolate taste change with every bite you take, giving you a complex experience and challenging your senses.

Ingredients: Fermented, dried, roasted cacao beans, raw organic cane sugar, red Sichuan peppercorn
Cacao %: 75%
Texture: Smooth
Stone ground: 48-60 hours
Aged: 1 month
Tasting notes: Cherry, spice, toffee, tobacco, fresh, citrus, numbing, tingling.
Pairs with: Pinot Noir, sweet wine, port/fortified wine, fruity, woody, or sweet whiskey
Weight: 50g

Storage suggestion
Store in a cool dry place away from the light. The ideal temperature is 12-20 degrees. If some spots or a white film appear on the bar, it is not mould, it is simply the cacao butter that comes at the surface of the bar due to changes in temperature and/or humidity. It is still perfectly delicious to eat.
